All of the fruit was whole cluster-pressed and fermented separately in neutral French oak barrels. After fermentation the wine remains in barrel on the lees (sur lie) for approximately 7 months, then for 5 months together in tank. Malolactic fermentation (100% complete) and regular stirring of the lees (battonage) added complexity and richness. White Coral was bottled November 24, 2014.
